You can toggle the option for Helmets by going to the 'Book > Knight of Veda > Ascension' screen, and use the 'Equip/Unequip Helmet' option at the bottom left of the window.

This setting applies to each individual Knight of Veda, so please select the specific characters that you wish to hide the helmet.
